How to make it
6 steps. Take it one step at a time.
Heat the olive oil
Heat the olive oil in a large heavy-bottomed pot over medium-high heat. Add the beef cubes and sear until browned on all sides. Remove the beef and set aside.
10 minAdd the onion, carrots, and celery
In the same pot, add the onion, carrots, and celery. Cook for 5-7 minutes until the vegetables begin to soften.
7 minAdd the minced garlic and dried thyme
Add the minced garlic and dried thyme. Sauté for another minute until fragrant.
1 minReturn the beef to the pot
Return the beef to the pot. Pour in the beef broth and add the pearl barley. Bring the mixture to a boil.
Reduce the heat to low
Reduce the heat to low, cover, and simmer for 60 to 90 minutes, or until the beef and barley are completely tender.
1 hr 30 minSeason with salt and black pepper
Season with salt and black pepper to taste before serving.
A little kitchen wisdom
For the best flavor, sear the beef in small batches to ensure a deep brown crust. You can substitute pearl barley with pot barley, but cooking times may increase.
