How to make it
6 steps. Take it one step at a time.
Preheat your grill
Preheat your grill to medium-high heat, or preheat your oven to 400°F (204°C).
Peel the plantains
Peel the plantains by cutting off the tips and making a shallow slit down the length of the skin. Using your fingers, pull the skin away from the flesh.
Make 2-3 shallow longitudinal slits along the body of each plantain
Make 2-3 shallow longitudinal slits along the body of each plantain. Lightly brush with vegetable oil and sprinkle a pinch of salt over them.
Place the plantains
Place the plantains on the grill rack or oven wire rack. Roast for about 15-20 minutes, turning them every 5 minutes to ensure all sides are evenly browned and charred.
20 minRemove them from the heat
Once the plantains are tender and have developed a dark golden-brown color with some charred spots, remove them from the heat.
Serve hot with a side of roasted peanuts
Serve hot with a side of roasted peanuts (groundnuts).
A little kitchen wisdom
For the best results, use yellow plantains with a few black spots. These are ripe but still firm enough to hold their shape during roasting. If using an oven, place them on a wire rack to allow air circulation.
