How to make it
5 steps. Take it one step at a time.
Bring the vegetable stock
In a large pot, bring the vegetable stock to a boil over medium-high heat.
Add the bruised lemongrass, sliced galangal, torn kaffir lime leaves
Add the bruised lemongrass, sliced galangal, torn kaffir lime leaves, and bruised chilies. Simmer for about 5 minutes until the broth becomes highly aromatic.
5 minAdd the mushrooms
Add the mushrooms to the pot and continue to simmer for another 3-5 minutes until the mushrooms are cooked through and tender.
5 minStir in the soy sauce and sugar
Stir in the soy sauce and sugar (if using). Taste and adjust the seasoning as needed.
Turn off the heat
Turn off the heat. Stir in the fresh lime juice and top with fresh cilantro. Serve hot.
A little kitchen wisdom
Always add the lime juice after removing the pot from the heat to preserve its fresh, zesty flavor and prevent bitterness. Use a mix of mushrooms like oyster, straw, or shiitake for the best texture.
