How to make it
8 steps. Take it one step at a time.
Combine warm milk, 1 tablespoon of sugar, and yeast
In a small bowl, combine warm milk, 1 tablespoon of sugar, and yeast. Let it sit for about 10 minutes until it becomes frothy.
10 minMix the flour, remaining dough sugar, salt, melted butter, eggs
In a large mixing bowl, mix the flour, remaining dough sugar, salt, melted butter, eggs, and the yeast mixture. Knead the dough until it is smooth and elastic (about 5-8 minutes).
8 minCover the dough with a clean cloth and let it rise
Cover the dough with a clean cloth and let it rise in a warm place for about 1 hour or until doubled in size.
1 hrPreheat your oven
Preheat your oven to 190°C (374°F). Prepare your cylinders (wooden rollers or foil-covered cardboard tubes) by brushing them lightly with butter.
Roll out the dough
Roll out the dough into a thin rectangle and cut into strips about 2 cm (3/4 inch) wide. Wrap the strips around the prepared rollers, overlapping slightly so they stick together.
Mix the coating sugar, crushed walnuts, and cinnamon
Mix the coating sugar, crushed walnuts, and cinnamon in a flat tray. Brush the dough on the rollers with a little water or melted butter and roll them in the nut mixture until evenly coated.
Place the rollers
Place the rollers over a baking dish so the dough is suspended and doesn't touch the bottom. Bake at 190°C (374°F) for 20 minutes, rotating occasionally until golden brown.
20 minCarefully slide the cakes off the rollers while still warm
Carefully slide the cakes off the rollers while still warm and roll them one last time in the sugar-walnut mix if desired.
A little kitchen wisdom
Trdelník is traditionally cooked over open flames on a rotating spit, but a home oven with makeshift rollers works beautifully. For the best result, serve warm immediately after coating.
