How to make it
4 steps. Take it one step at a time.
Heat the vegetable oil
Heat the vegetable oil in a large pot over medium heat. Add the chicken pieces and brown them on all sides. Remove chicken and set aside.
8 minAdd the chopped onions and sauté
In the same pot, add the chopped onions and sauté until translucent. Add the minced garlic and ginger, cooking for another 2 minutes until fragrant.
7 minStir in the tomato paste
Stir in the tomato paste and cook for 3 minutes, allowing it to darken slightly. Pour in the chicken broth and whisk in the peanut butter until the sauce is smooth.
5 minReturn the chicken
Return the chicken to the pot. Add the whole scotch bonnet pepper. Bring to a boil, then reduce heat to low and simmer for 25-30 minutes until the chicken is tender and the oil starts to separate from the sauce.

A little kitchen wisdom
For the most authentic flavor, use natural, unsweetened peanut butter. You can use chicken, beef, or keep it strictly vegetarian by adding more sweet potatoes and cabbage.
