How to make it
7 steps. Take it one step at a time.
Soak the dried goji berries
Soak the dried goji berries in a small bowl of warm water for 5-10 minutes until plumped, then drain and set aside.
10 minCombine the water and agar-agar powder
In a saucepan, combine the water and agar-agar powder. Bring to a boil over medium heat while stirring constantly. Simmer for 1-2 minutes until the powder is completely dissolved.
2 minAdd the granulated sugar
Add the granulated sugar to the saucepan and stir until fully dissolved.
Lower the heat and slowly pour
Lower the heat and slowly pour in the milk and almond extract. Heat through but do not let the mixture reach a hard boil. Remove from heat.
Pour the mixture
Pour the mixture into a flat-bottomed rectangular container or individual ramekins. Use a spoon to remove any air bubbles on the surface for a smooth finish.
Let it cool to room temperature
Let it cool to room temperature, then cover and refrigerate for at least 2 hours until firm.
2 hrCut the almond tofu
Once set, cut the almond tofu into cubes or diamond shapes using a knife. Serve chilled, garnished with the soaked goji berries. Optionally serve in a light sugar syrup or with canned mandarin oranges.
A little kitchen wisdom
Traditional Annin Tofu is made using apricot kernels, but this version uses almond extract and agar-agar for a consistent, easy result. Ensure the milk is not boiled too vigorously to maintain a smooth texture.
