How to make it
6 steps. Take it one step at a time.
Preheat your oven
Preheat your oven to 325°F (163°C) and line two baking sheets with parchment paper or silicone mats.
Whisk the egg whites and a pinch of salt
In a clean bowl, whisk the egg whites and a pinch of salt until they reach soft peaks.
Gently fold in the almond extract
Gently fold in the almond extract, followed by the almond flour and granulated sugar, until a thick, slightly sticky paste forms.
Scoop small amounts of dough
Scoop small amounts of dough (about 1 tablespoon each) and roll them into balls. Roll each ball in the powdered sugar until generously coated.
Place the balls on the prepared baking sheets, spaced about 1 inch apart
Place the balls on the prepared baking sheets, spaced about 1 inch apart. Bake for 20-25 minutes at 325°F (163°C) until the bottoms are lightly golden and the tops are slightly cracked.
20 minAllow the cookies
Allow the cookies to cool completely on the baking sheet to firm up before serving.
A little kitchen wisdom
Ensure the egg whites are at room temperature for the best volume. Do not overbake; they should remain slightly soft to the touch when removed from the oven as they firm up while cooling.
