How to make it
8 steps. Take it one step at a time.
Combine the flour, water, oil, and salt
In a large bowl, combine the flour, water, oil, and salt. Knead the dough until it is smooth and elastic (about 10 minutes). Shape into a ball, brush with oil, and let rest in a warm place for 30 minutes.
40 minWhile the dough rests, melt 50g of butter
While the dough rests, melt 50g (1.8 oz) of butter in a pan and toast the breadcrumbs until they are golden brown. Set aside.
5 minMix the sliced apples
In another bowl, mix the sliced apples with sugar, cinnamon, raisins, and lemon juice.
Preheat the oven
Preheat the oven to 180°C (350°F). Place a clean kitchen cloth on a large table and dust it with flour. Roll out the dough and then use the back of your hands to gently stretch it from the center until it is very thin and translucent.
Brush the dough with some of the remaining melted butter
Brush the dough with some of the remaining melted butter. Sprinkle the toasted breadcrumbs over two-thirds of the dough, then spread the apple mixture over the breadcrumbs.
Fold in the edges of the dough
Fold in the edges of the dough and roll up the strudel tightly using the cloth to help. Place it seam-side down on a parchment-lined baking sheet and brush the top with butter.
Bake for 40 minutes
Bake for 40 minutes at 180°C (350°F) until golden brown. Brush with more butter halfway through if desired.
40 minLet cool slightly
Let cool slightly, then dust with powdered sugar before serving warm.
A little kitchen wisdom
The secret to a great strudel is stretching the dough until it is thin enough to read a newspaper through it. Using a clean floured cloth helps with the rolling process.
