How to make it
6 steps. Take it one step at a time.
Place quail eggs
Place quail eggs in a small pot of water. Bring to a boil and cook for 4-5 minutes. Drain, cool in an ice bath, peel, and set aside.
5 minCut the rice paper sheets
Using kitchen shears, cut the rice paper sheets into thin strips about 1cm wide. Place them into a very large mixing bowl.
Add the shredded green mango, shredded beef jerky, dried shrimp
Add the shredded green mango, shredded beef jerky, dried shrimp, fried shallots, and roasted peanuts to the bowl with the rice paper.
Drizzle the chili oil, scallion oil, and calamansi juice
Drizzle the chili oil, scallion oil, and calamansi juice over the ingredients. Sprinkle the shrimp salt evenly over the top.
Toss the mixture vigorously
Using gloved hands or large tongs, toss the mixture vigorously for about 1-2 minutes until the rice paper strips are evenly coated and start to soften slightly from the moisture of the mango and dressing.
2 minAdd the chopped Vietnamese coriander and the boiled quail eggs
Add the chopped Vietnamese coriander and the boiled quail eggs. Give it one final gentle toss so the eggs don't break. Serve immediately in a bowl or a paper bag for the street food experience.
A little kitchen wisdom
For the most authentic flavor, use Tay Ninh shrimp salt and ensure the green mango is very firm and sour. Do not mix too far in advance, or the rice paper will become overly soggy.
