How to make it
6 steps. Take it one step at a time.
Rinse the glutinous rice
Rinse the glutinous rice and soak it in water for at least 1 hour (or overnight) to soften.
1 hrIf using raw black sesame seeds
If using raw black sesame seeds, toast them in a dry pan over medium-low heat for 3-5 minutes until fragrant. Be careful not to burn them as they will become bitter.
5 minDrain the rice
Drain the rice. Place the toasted sesame seeds, soaked rice, and 1000ml (4 1/4 cups) of water into a high-speed blender. Blend until completely smooth.
Pour the mixture through a fine-mesh sieve
Pour the mixture through a fine-mesh sieve into a pot to remove any remaining gritty particles for a silky texture.
Add the rock sugar and a pinch of salt
Add the rock sugar and a pinch of salt to the pot. Cook over medium heat, stirring constantly to prevent the bottom from sticking or burning.
Remove from heat
Once the mixture starts to simmer and thickens to your desired consistency (usually about 10 minutes), remove from heat and serve hot.

A little kitchen wisdom
For the smoothest texture, ensure you use a high-speed blender and strain the mixture through a fine-mesh sieve. Using rock sugar provides a cleaner, more mellow sweetness compared to granulated sugar.
