How to make it
5 steps. Take it one step at a time.
Cook the ground sausage
In a large non-stick skillet over medium-high heat, cook the ground sausage until browned and fully cooked to 165°F (74°C). Break it into small crumbles with a spatula while cooking. Remove sausage from the pan and set aside, leaving the rendered fat in the skillet.
8 minAdd the diced onion and bell pepper
In the same skillet, add the diced onion and bell pepper. Sauté over medium heat until the vegetables are softened and the onions are translucent (about 5 minutes). Remove from the pan and add to the sausage.
5 minWipe the skillet clean if necessary and melt the butter
Wipe the skillet clean if necessary and melt the butter over medium-low heat. Pour in the whisked eggs seasoned with salt and pepper. Stir slowly until the eggs are scrambled and just set.
3 minWarm the tortillas
Warm the tortillas in a separate dry pan or microwave for 15-20 seconds to make them pliable.
Lay each tortilla flat
Lay each tortilla flat. Divide the scrambled eggs, sausage-veggie mix, and shredded cheese evenly among the center of the four tortillas. Fold in the sides and roll tightly to form a burrito.
A little kitchen wisdom
For the best flavor, use high-quality breakfast sausage and fresh salsa. You can customize the spice level by adding chopped jalapeños or hot sauce.
