How to make it
4 steps. Take it one step at a time.
Combine minced lemongrass, garlic, fish sauce, honey, and vegetable oil
In a bowl, combine minced lemongrass, garlic, fish sauce, honey, and vegetable oil. Add the pork chops and coat thoroughly. Marinate for at least 30 minutes, or up to 24 hours in the fridge.
30 minRinse the broken rice several times
Rinse the broken rice several times until the water runs clear. Cook in a rice cooker using slightly less water than standard rice (about a 1:1 ratio) to ensure a firmer texture.
20 minHeat a grill or cast-iron skillet
Heat a grill or cast-iron skillet over medium-high heat. Grill the pork chops for about 4-5 minutes per side until charred and cooked through.
10 minPlate the broken rice, top
Plate the broken rice, top with the grilled pork chops, and garnish with sliced cucumbers, tomatoes, and pickled carrots.
A little kitchen wisdom
Traditional Cơm Tấm uses 'broken' rice grains, which have a unique texture that absorbs flavors better than whole grains. For the best result, marinate the pork for at least 2 hours or overnight.
