Mix everything together well. Garnish with pomegranate seeds if desired and serve.

A little kitchen wisdom

Using a small amount of milk helps prevent the rice from becoming too sour if you are packing it for later. Mashing the rice while it is still warm ensures the best creamy texture.

Keep the good going

For now. And for later.

Make it ahead

Prepare the rice and dairy mixture but hold the tempering until just before serving for best flavor. Add a splash of extra milk before serving as it thickens over time.

Store & enjoy

Store in an airtight container in the refrigerator. Curd rice is best eaten fresh or within a day. Usually served cold or at room temperature. Do not reheat directly as the yogurt will curdle; if needed, bring to room temperature naturally.
