How to make it
6 steps. Take it one step at a time.
Whisk the eggs, sugar, and honey
In a large bowl, whisk the eggs, sugar, and honey until the mixture becomes slightly pale and frothy.
Dissolve the baking soda
Dissolve the baking soda in 1 tablespoon of water. Add this mixture to the eggs and whisk well.
Sift the cake flour
Sift the cake flour into the bowl and fold gently until just combined. Let the batter rest in the refrigerator for 15 minutes to allow the flour to hydrate.
15 minHeat a non-stick pan
Heat a non-stick pan over low heat. Lightly oil the pan, then wipe it off with a paper towel so no visible oil remains. Pour a small amount of batter to form a 3-4 inch circle.
Cook for about 2 minutes
Cook for about 2 minutes until bubbles appear on the surface. Flip and cook the other side for about 1 minute. Remove and place in a container covered with a damp towel.
3 minTake two pancakes
Take two pancakes and place a generous dollop of red bean paste in the center. Press the pancakes together, pinching the edges slightly to seal.
A little kitchen wisdom
Ensure your pan is non-stick and use very low heat to get that characteristic uniform brown color. Covering the pancakes with a damp cloth after cooking keeps them moist and pliable.
