How to make it
5 steps. Take it one step at a time.
Cut the chicken thighs
Cut the chicken thighs into 1.5-inch bite-sized pieces.
Combine the soy sauce, sake, grated ginger, and grated garlic
In a bowl, combine the soy sauce, sake, grated ginger, and grated garlic. Add the chicken pieces and massage the marinade into the meat. Let it sit for at least 20 minutes.
20 minDrain any excess marinade
Drain any excess marinade. Dredge each piece of chicken in the potato starch until evenly coated.
Heat vegetable oil
Heat vegetable oil to 340°F (170°C). Fry the chicken in batches for about 3-4 minutes per batch until the exterior is golden brown and the internal temperature is safe.
4 minTransfer the chicken
Transfer the chicken to a wire rack or paper towels to drain excess oil before serving.
A little kitchen wisdom
Potato starch (katakuriko) is the key to getting that signature light, crispy texture. If you can't find it, cornstarch is a suitable alternative.
