How to make it
7 steps. Take it one step at a time.
Preheat your oven
Preheat your oven to 400°F (204°C). Scrub the potatoes clean and pat them dry. Prick them several times with a fork.
Place potatoes directly
Place potatoes directly on the oven rack and bake for 45-50 minutes, or until the skins are crisp and the insides are tender.
45 minRemove from oven and let cool
Remove from oven and let cool for 10 minutes. Increase the oven temperature to 450°F (232°C).
10 minCut potatoes in half lengthwise
Cut potatoes in half lengthwise. Scoop out the flesh, leaving about 1/4 inch of potato attached to the skin. Brush both sides of the skins with olive oil and sprinkle with salt and pepper.
Place the skins cut-side down
Place the skins cut-side down on a baking sheet. Bake for 10 minutes, flip them over, and bake for another 5 minutes until crispy.
15 minFill the hollowed skins
Fill the hollowed skins with shredded cheddar cheese and bacon bits. Return to the oven for 2-3 minutes until the cheese is bubbly and melted.
3 minRemove from oven and top each skin
Remove from oven and top each skin with a dollop of sour cream and a sprinkle of sliced green onions before serving.
A little kitchen wisdom
For the crispiest skins, ensure the potatoes are completely dry before rubbing with oil. You can save the scooped-out potato flesh for mashed potatoes or potato soup.
