How to make it
5 steps. Take it one step at a time.
Whisk together the dark soy sauce, light soy sauce, oyster sauce, and sugar
In a small bowl, whisk together the dark soy sauce, light soy sauce, oyster sauce, and sugar until the sugar is dissolved.
Heat 1 tablespoon of vegetable oil
Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the minced garlic and sliced chicken. Stir-fry until the chicken is cooked through and the garlic is fragrant.
Push the chicken
Push the chicken to one side of the wok. Add a tiny splash of oil if needed, then crack the eggs into the empty space. Scramble them quickly until mostly set, then mix them into the chicken.
Add the rice noodles and the prepared sauce mixture
Add the rice noodles and the prepared sauce mixture. Stir-fry at high heat, tossing as little as possible to allow the noodles to sit against the hot surface for 30-60 seconds at a time to get a nice char and caramelization.
2 minAdd the Chinese broccoli and continue
Add the Chinese broccoli and continue to stir-fry for 1-2 minutes until the leaves are wilted and the stems are tender-crisp. Serve immediately.

A little kitchen wisdom
The key to a great Pad See Ew is 'Wok Hei' or the breath of the wok. Use high heat and try not to toss the noodles too much to allow them to char slightly.
