How to make it
6 steps. Take it one step at a time.
Place the fish in the freezer
Place the fish in the freezer for 10-15 minutes before slicing to firm it up, making it easier to cut clean slices.
15 minShred the daikon radish
Shred the daikon radish into very fine long strips and soak in ice water for 5 minutes. Drain and pat dry.
5 minSlice the salmon and tuna across the grain
Using a very sharp knife, slice the salmon and tuna across the grain into 0.5 cm (1/4 inch) thick slices. Aim for a single, smooth pulling motion with the knife.
Arrange a mound of shredded daikon
On a chilled plate, arrange a mound of shredded daikon and place two shiso leaves on top or behind it.
Fan the fish slices elegantly
Fan the fish slices elegantly over the daikon and shiso. Place a small dollop of wasabi and a mound of pickled ginger on the side.
Pour the soy sauce
Pour the soy sauce into small individual dipping bowls and serve immediately.
A little kitchen wisdom
Always ensure you are purchasing 'sashimi-grade' or 'sushi-grade' fish to ensure it is safe for raw consumption. Keep the fish as cold as possible until the moment of serving.
