How to make it
7 steps. Take it one step at a time.
Preheat your oven
Preheat your oven to 200°C (392°F). Peel, core, and halve the apples.
In a 23cm ovenproof skillet, melt the butter
In a 23cm ovenproof skillet, melt the butter over medium heat. Sprinkle the sugar and a pinch of salt evenly over the melted butter.
Cook for 5-8 minutes
Cook for 5-8 minutes until the mixture turns a deep amber caramel. Arrange the apple halves in the skillet, rounded side down, packing them tightly as they will shrink.
8 minCook the apples in the caramel
Cook the apples in the caramel for 10-15 minutes on medium heat until they begin to soften and release their juices. Remove from heat and let cool slightly.
15 minRoll out the puff pastry
Roll out the puff pastry and cut a circle slightly larger than the skillet. Place the pastry over the apples, tucking the edges down into the skillet.
Bake in the preheated oven
Bake in the preheated oven at 200°C (392°F) for 25-30 minutes until the pastry is golden brown and puffed. Remove from the oven and let rest for 5 minutes.
30 minPlace a large serving plate
Place a large serving plate over the skillet. Using oven mitts, carefully and quickly flip the skillet and plate together. Lift the skillet to reveal the tart. Serve warm.
A little kitchen wisdom
Firm apples like Granny Smith, Braeburn, or Cox's Orange Pippin are best because they hold their shape during the caramelization process. Be extremely careful when flipping the tart as the caramel is very hot.
