Let's make something good

How to make it

5 steps. Take it one step at a time.

  1. Combine the ground pork, minced ginger, the white parts of the scallions

In a mixing bowl, combine the ground pork, minced ginger, the white parts of the scallions, 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, and a pinch of salt. Mix well in one direction until the meat becomes tacky.

  2. Place about 1 teaspoon of filling

Place about 1 teaspoon of filling in the center of a wonton wrapper. Moisten the edges with water, fold into a triangle, and press to seal, then bring the two bottom corners together and pinch to secure.

  3. Bring a large pot of water

Bring a large pot of water to a rolling boil at 212°F (100°C). Gently drop the wontons in and cook until they float to the surface and the filling is cooked through, about 3-4 minutes. Use a slotted spoon to remove them and set aside.

    4 min
  4. Combine chicken stock, smashed garlic, the remaining ginger

In another pot, combine chicken stock, smashed garlic, the remaining ginger, remaining soy sauce, and sesame oil. Bring to a simmer at 180°F (82°C) for 10 minutes to infuse the flavors. Add the bok choy in the last 2 minutes to blanch.

    10 min
  5. Divide the cooked wontons and bok choy

Divide the cooked wontons and bok choy into four bowls. Pour the hot broth over them and garnish with the green parts of the scallions. Serve immediately.

A little kitchen wisdom

For the best texture, ensure the wonton wrappers are kept under a damp cloth while working so they don't dry out. You can also freeze uncooked wontons on a tray before transferring to a bag for long-term storage.

Keep the good going

For now. And for later.

Make it ahead

The wontons can be assembled and frozen on a baking sheet, then stored in a freezer bag for up to 1 month. Cook directly from frozen, adding 2-3 minutes to the boiling time.

Store & enjoy

Store wontons and broth separately in the fridge to prevent the wrappers from becoming soggy. Reheat the broth until boiling, then add the wontons just long enough to warm through.
