How to make it
5 steps. Take it one step at a time.
Pour the 2 liters of full cream milk
Pour the 2 liters (8 1/2 cups) of full cream milk into a clean glass jar, clay pot, or traditional calabash. Ensure there is a bit of headspace at the top.
Cover the container
Cover the container with a breathable cloth or a loose-fitting lid to allow gases to escape while keeping dust and insects out.
Place the container
Place the container in a warm, dark spot in your kitchen (ideally around 25°C or 77°F). Let it sit undisturbed for 48 to 72 hours.
2 daysOnce the milk has thickened and developed a sour aroma, the Amasi is ready
Once the milk has thickened and developed a sour aroma, the Amasi is ready. You may notice a watery liquid (whey) separating from the solids; this is normal. Stir the mixture gently to achieve a smooth consistency or drain some whey if you prefer it extra thick.
Store in the refrigerator
Store in the refrigerator and serve chilled.
A little kitchen wisdom
Traditionally, Amasi is prepared in a calabash (igula) or a clay pot. The fermentation time depends on the ambient temperature; in warmer weather, it may be ready in 24 hours, while in winter it may take up to 3 days.
