How to make it
9 steps. Take it one step at a time.
Preheat your oven
Preheat your oven to 180°C (356°F). Grease a medium-sized ovenproof baking dish.
Place the slices of bread
Place the slices of bread in a bowl and pour 100 ml (approx. 1/3 cup) of the milk over them. Let them soak until soft.
Heat the oil in a large pan
Heat the oil in a large pan over medium heat. Sauté the onions until translucent and golden. Stir in the garlic and cook for another minute.
Add the ground beef
Add the ground beef to the pan and cook until browned, breaking it up with a spoon. Drain any excess fat if necessary.
Stir in the curry powder, turmeric, salt, and pepper
Stir in the curry powder, turmeric, salt, and pepper. Add the fruit chutney, raisins, and lemon juice. Mix well.
Squeeze the excess milk from the soaked bread
Squeeze the excess milk from the soaked bread (reserve the milk). Mash the bread and add it to the meat mixture along with 1 beaten egg. Mix thoroughly and cook for 5 minutes.
5 minTransfer the meat mixture
Transfer the meat mixture to the prepared baking dish and smooth the surface. Tuck the bay leaves into the meat.
Whisk the remaining 2 eggs
Whisk the remaining 2 eggs with the remaining milk (including any reserved from soaking). Pour this mixture over the meat.
Bake in the preheated oven
Bake in the preheated oven for 35 to 40 minutes, or until the custard topping is set and lightly browned.

A little kitchen wisdom
Bobotie is best served with yellow rice (turmeric and raisins) and a side of fruit chutney. For the most authentic flavor, use a fruity chutney like Mrs. Ball's.
