How to make it
5 steps. Take it one step at a time.
Add the chopped onions
In a wide skillet or pan, add the chopped onions and cook over medium heat until they soften and begin to brown. Traditionally, this is done without oil initially to draw out moisture.
5 minAdd the niter kibbeh and let it melt
Add the niter kibbeh (or oil) and let it melt. Stir in the berbere spice, garlic, and ginger. Sauté for 2-3 minutes until fragrant.
3 minStir in the tomato paste followed
Stir in the tomato paste followed by the water or vegetable broth. Simmer for about 5 minutes until the sauce thickens slightly into a rich 'wot' (sauce). Season with salt to taste.
5 minGently fold in the torn pieces of injera
Gently fold in the torn pieces of injera. Stir carefully so the pieces are well-coated with the sauce but don't turn into a complete mush. Let it sit for 1-2 minutes to absorb the flavors.
2 minServe hot, garnished
Serve hot, garnished with sliced jalapeño if desired. It is usually served with an extra side of fresh injera or yogurt.
A little kitchen wisdom
Traditional firfir is made with leftover injera, which absorbs the sauce better than fresh injera. Use Niter Kibbeh for the most authentic flavor.
