How to make it
5 steps. Take it one step at a time.
Bring a small pot of water
Bring a small pot of water to a boil. Add the tapioca pearls and boil for 15 minutes or until they reach the desired chewiness. Turn off the heat and let them sit in the water for another 5 minutes.
20 minWhile pearls are cooking, brew the black tea
While pearls are cooking, brew the black tea in 350ml (1 1/2 cups) of water at 200°F (93°C) for 5 minutes. Strain the leaves or remove the tea bags and set the tea aside to cool.
5 minDrain the cooked pearls
Drain the cooked pearls and place them in a small bowl. Stir in the brown sugar while the pearls are hot; the sugar will melt into a thick syrup.
Combine the brewed tea and milk
In a shaker or large glass, combine the brewed tea and milk. Stir well to combine. Add additional syrup if you prefer it sweeter.
To serve, divide the syrupy pearls between two glasses
To serve, divide the syrupy pearls between two glasses. Add ice cubes, then pour the milk tea mixture over the ice. Serve with a wide straw.
A little kitchen wisdom
Use 'Quick Cook' tapioca pearls for a faster version. Adjust the sugar level by adding more or less brown sugar syrup to the glass.
