How to make it
5 steps. Take it one step at a time.
Rinse the mung beans thoroughly
Rinse the mung beans thoroughly and soak them in water for at least 1 hour (or overnight) to soften.
1 hrBring 1.5 liters of water
In a large pot, bring 1.5 liters (1.5 l) of water to a boil. Add the soaked mung beans, ginger, and pandan leaves. Simmer until the beans are tender and have burst open, which usually takes 30-45 minutes.
45 minAdd the chopped palm sugar and salt
Add the chopped palm sugar and salt. Stir until the sugar is completely dissolved.
5 minPour in the coconut milk
Pour in the coconut milk. Stir gently and bring back to a very light simmer for about 2-3 minutes. Do not let it boil vigorously to avoid the coconut milk from curdling.
3 minRemove from heat
Remove from heat and serve either warm or chilled.
A little kitchen wisdom
Soaking the mung beans overnight or for at least 1 hour significantly reduces the cooking time and ensures a more even texture. For a richer flavor, you can use fresh coconut milk or add a bit more palm sugar to your preference.
