How to make it
6 steps. Take it one step at a time.
Whisk together 1 cup of buttermilk, salt, and pepper
In a large bowl, whisk together 1 cup of buttermilk (240ml), salt, and pepper. Add the chicken pieces and ensure they are well coated. Marinate in the refrigerator for at least 30 minutes.
30 minMix 1.5 cups of flour, paprika, and garlic powder
In a separate shallow dish, mix 1.5 cups of flour (188g), paprika, and garlic powder. Dredge each piece of marinated chicken in the flour mixture, pressing to adhere.
Heat the vegetable oil
Heat the vegetable oil in a deep pot or fryer to 350°F (177°C). Carefully drop the chicken pieces into the hot oil and fry for 6-8 minutes per side or until the internal temperature reaches 165°F (74°C) and the crust is golden brown. Drain on a wire rack.
15 minPrepare the waffle batter
While the chicken fries, prepare the waffle batter. In a large bowl, whisk the remaining 1.5 cups of flour (188g), sugar, baking powder, and a pinch of salt. In another bowl, beat the eggs with the remaining 1 cup of buttermilk (240ml) and melted butter. Stir the wet ingredients into the dry until just combined.
Cook the waffles
Cook the waffles in a preheated waffle iron according to the manufacturer's instructions until crisp and golden.
5 minServe the hot fried chicken
Serve the hot fried chicken on top of the fresh waffles and drizzle generously with maple syrup.
A little kitchen wisdom
For the crispiest chicken, allow the breaded pieces to rest for 10 minutes before frying. Use high-quality maple syrup for the best flavor.
