A little kitchen wisdom
Using gingelly oil (sesame oil) provides the most authentic flavor. Always use freshly ground spices for the Chettinad masala rather than pre-packaged powders. Stone flower (Kalpasi) is the secret ingredient for that unique earthy aroma.
