How to make it
4 steps. Take it one step at a time.
Whisk together the red wine vinegar, Dijon mustard, and salt/pepper
In a small bowl, whisk together the red wine vinegar, Dijon mustard, and salt/pepper. Slowly drizzle in the olive oil while whisking constantly until the dressing is emulsified.
Place the chopped Romaine lettuce
Place the chopped Romaine lettuce at the bottom of a large shallow bowl or platter to create a base for the salad.
Arrange the diced chicken, crumbled bacon, hard-boiled eggs, avocado
Arrange the diced chicken, crumbled bacon, hard-boiled eggs, avocado, tomatoes, and blue cheese in neat, parallel rows across the top of the lettuce.
Sprinkle the finely chopped chives
Sprinkle the finely chopped chives over the entire salad. Serve the dressing on the side or drizzle it over the salad just before serving.
A little kitchen wisdom
For the most authentic flavor, use Roquefort cheese. Arrange the ingredients in neat rows to achieve the iconic look before tossing with the dressing.
