How to make it
5 steps. Take it one step at a time.
Combine the flour, salt, and baking soda
In a large mixing bowl, combine the flour, salt, and baking soda.
Add the lard and start mixing
Add the lard and start mixing by hand, breaking the fat into the flour until crumbly. Gradually add the warm water and knead until a smooth, elastic dough forms (about 10 minutes).
10 minCover the dough with a clean cloth and let it rest
Cover the dough with a clean cloth and let it rest at room temperature for at least 30 minutes.
30 minDivide the dough
Divide the dough into 4 equal portions. On a lightly floured surface, roll each ball into a circle about 2-3mm thick.
Heat a non-stick pan or a traditional 'testo'
Heat a non-stick pan or a traditional 'testo' over medium-high heat. Cook each piadina for about 2 minutes per side, pricking any large bubbles with a fork, until golden brown spots appear.

A little kitchen wisdom
Traditionally made with lard for the best texture, but high-quality extra virgin olive oil can be substituted for a vegetarian version. Always cook on a very hot, dry pan.
