How to make it
6 steps. Take it one step at a time.
Heat 1 tbsp oil in a pan
Heat 1 tbsp oil in a pan. Add the mashed potatoes, Dabeli masala, and 2 tbsp of tamarind chutney. Mix well and cook for 3-4 minutes until the flavors are combined. Spread the mixture onto a flat plate.
4 minTop the potato mixture
Top the potato mixture on the plate with chopped onions, masala peanuts, pomegranate seeds, and some fresh cilantro.
Slit the pav buns horizontally
Slit the pav buns horizontally, keeping one side attached. Apply garlic chutney on one inner side and tamarind chutney on the other side.
Stuff a generous portion of the potato filling
Stuff a generous portion of the potato filling into the bun. Add extra peanuts and pomegranate seeds inside if desired.
Heat butter on a griddle or pan
Heat butter on a griddle or pan. Toast the stuffed pav on both sides until golden and slightly crisp.
2 minRoll the edges of the dabeli
Roll the edges of the dabeli in fine sev so that the sev sticks to the potato mixture on the sides. Serve hot.
A little kitchen wisdom
Ensure the potato mixture is moist but not runny. You can adjust the spice level by varying the amount of garlic chutney. If Dabeli masala is unavailable, a mix of garam masala, dry mango powder, and fennel powder can be used as a substitute.
