How to make it
5 steps. Take it one step at a time.
Place the cubed beef
Place the cubed beef in a pot with a pinch of salt and a little water. Boil over medium heat until tender (about 20-30 minutes). Drain and reserve the broth to use as stock.
25 minHeat the vegetable oil
In a large heavy-bottomed pot, heat the vegetable oil. Add the sliced onions and sauté until they are very dark brown but not burnt. This provides the color for the rice.
10 minStir in the minced garlic, ginger, and pilau masala
Stir in the minced garlic, ginger, and pilau masala. Cook for 2 minutes until fragrant.
2 minAdd the boiled beef
Add the boiled beef to the pot and brown it for a few minutes. Then, add the washed rice and stir to coat every grain with the oil and spices.
3 minPour in the beef stock
Pour in the beef stock and add salt. Bring to a boil, then reduce heat to low. Cover the pot with a tight-fitting lid (or foil under the lid) and simmer for 15-20 minutes until all liquid is absorbed and rice is fluffy.

A little kitchen wisdom
For the best results, use whole spices and grind them yourself for the pilau masala. Getting the onions to a deep brown color is the secret to the signature brown color of the rice without using food coloring.
