How to make it
4 steps. Take it one step at a time.
Heat about 250 ml of the water
In a small pot, heat about 250 ml (1 cup) of the water with the grated panela over medium heat, stirring until the sugar is completely dissolved into a syrup.
5 minPour the panela syrup
Pour the panela syrup into a large pitcher and add the remaining cold water. Stir well to combine.
Stir in the freshly squeezed lime juice
Stir in the freshly squeezed lime juice. Taste and adjust with more lime if a tangier flavor is desired.
Fill glasses with ice cubes
Fill glasses with ice cubes and pour the guarapo over them. Serve immediately while chilled.
A little kitchen wisdom
Authentic guarapo is often made by pressing raw sugar cane, but using panela (piloncillo) allows you to recreate that earthy, molasses-like sweetness at home. Ensure the panela is fully dissolved for the best texture.
