How to make it
6 steps. Take it one step at a time.
Whisk together the lukewarm water, milk, sugar, and yeast
In a large bowl, whisk together the lukewarm water, milk, sugar, and yeast until the yeast dissolves. Let it sit for 5-10 minutes until it becomes frothy.
10 minGradually add the flour and salt
Gradually add the flour and salt to the yeast mixture. Mix thoroughly with a wooden spoon or stand mixer until a smooth, sticky batter forms.
Cover the bowl with a damp cloth or plastic wrap and let the dough rise
Cover the bowl with a damp cloth or plastic wrap and let the dough rise in a warm place for about 60 minutes, or until it has doubled in size.
1 hrHeat the vegetable oil
Heat the vegetable oil in a deep pan or pot to approximately 350°F (177°C).
Using two spoons dipped
Using two spoons dipped in water (to prevent sticking), scoop small balls of dough and carefully drop them into the hot oil. Fry until they are golden brown and crispy on all sides, turning them frequently.
Remove the puffs
Remove the puffs with a slotted spoon and place them on paper towels to drain excess oil. While warm, drizzle generously with honey and sprinkle with ground cinnamon and chopped walnuts.
A little kitchen wisdom
Ensure the water and milk are lukewarm, not hot, to avoid killing the yeast. For the best texture, fry in small batches so the oil temperature doesn't drop.
