How to make it
6 steps. Take it one step at a time.
Whisk together the eggs, milk, sparkling water, and salt
In a large mixing bowl, whisk together the eggs, milk, sparkling water, and salt until well combined.
Gradually sift the flour
Gradually sift the flour into the wet mixture, whisking constantly to prevent lumps from forming. Add 1 tablespoon of oil to the batter and whisk until smooth.
Cover the bowl and let the batter rest
Cover the bowl and let the batter rest at room temperature for at least 30 minutes.
30 minLightly grease a non-stick frying pan or crepe pan
Lightly grease a non-stick frying pan or crepe pan with a tiny bit of oil and heat it over medium-high heat. Pour a small ladle of batter into the pan, tilting it quickly to cover the entire surface with a thin layer.
Cook for about 1-2 minutes
Cook for about 1-2 minutes until the edges start to curl and the bottom is golden brown. Flip and cook for another 30-60 seconds on the other side.
2 minStack the cooked crepes
Stack the cooked crepes on a plate to keep them warm. Repeat with the remaining batter.
A little kitchen wisdom
Using sparkling water instead of still water makes the batter lighter and more aerated. Ensure the pan is very hot before pouring the first crepe. If the batter is too thick, add a splash more milk.
