How to make it
6 steps. Take it one step at a time.
Preheat your oven
Preheat your oven to 375°F (191°C).
Cook the crumbled chorizo
In a medium skillet over medium-high heat, cook the crumbled chorizo until browned and cooked through, about 5-7 minutes. Remove the chorizo from the skillet and drain on paper towels, but keep about 1 tablespoon of the fat in the pan.
7 minIn the same skillet
In the same skillet with the reserved fat, sauté the chopped onion and diced poblano pepper until softened, about 4 minutes. Add the minced garlic and cook for another minute until fragrant. Stir the cooked chorizo back into the mixture.
5 minPlace the shredded Monterey Jack cheese
Place the shredded Monterey Jack cheese in a shallow oven-proof baking dish or a cast-iron skillet. Spread the chorizo and vegetable mixture evenly over the top.
Bake in the preheated oven
Bake in the preheated oven for 10-12 minutes, or until the cheese is completely melted, bubbly, and slightly golden on the edges.
12 minGarnish with fresh chopped cilantro
Garnish with fresh chopped cilantro. Serve immediately with warm corn tortillas for dipping.
A little kitchen wisdom
For the most authentic stretch, try to find Oaxaca cheese or Chihuahua cheese. If those aren't available, Monterey Jack is an excellent substitute.
