How to make it
6 steps. Take it one step at a time.
Heat the olive oil
Heat the olive oil in a medium saucepan over medium heat. Add the diced onion and sauté until translucent and soft, about 5 minutes.
5 minAdd the minced garlic
Add the minced garlic and cook for another 1 minute until fragrant, being careful not to burn it.
1 minStir in the flour and both types of smoked paprika
Stir in the flour and both types of smoked paprika. Cook for 1-2 minutes, stirring constantly to toast the spices and flour without burning them.
2 minGradually whisk in the vegetable broth
Gradually whisk in the vegetable broth to prevent lumps from forming. Bring the mixture to a gentle simmer.
Let the sauce simmer
Let the sauce simmer for about 5-10 minutes until it thickens to a coating consistency. Season with salt and add sherry vinegar if using.
10 minRemove from heat
Remove from heat. For a perfectly smooth sauce, blend with an immersion blender or in a standard blender until uniform.
A little kitchen wisdom
For the best flavor, use authentic Pimentón de la Vera (Spanish smoked paprika). You can adjust the heat by increasing or decreasing the amount of hot paprika.
