How to make it
5 steps. Take it one step at a time.
Rinse the toor dal and pressure cook
Rinse the toor dal and pressure cook with turmeric and 1.5 cups of water until soft and mushy (about 3-4 whistles). Once cooked, mash the dal thoroughly and set aside.
15 minAdd the chopped vegetables, shallots, and tomato
In a separate pot, add the chopped vegetables, shallots, and tomato with 1 cup of water and salt. Cook until the vegetables are tender.
10 minAdd the tamarind paste and sambar powder
Add the tamarind paste and sambar powder to the cooked vegetables. Simmer for 5 minutes until the raw smell of tamarind disappears.
5 minAdd the mashed dal
Add the mashed dal to the vegetable mixture. Adjust consistency with water if needed and bring to a gentle boil.
2 minFor the tempering
For the tempering, heat ghee in a small pan. Add mustard seeds. When they pop, add curry leaves and asafoetida. Pour this hot tempering over the sambar.

A little kitchen wisdom
Using small onions (shallots) provides the most authentic flavor. You can use any combination of vegetables like drumstick, okra, or radish.
