How to make it

5 steps. Take it one step at a time.

  1. Add 3 tbsp of coffee powder

Add 3 tbsp (15g) of coffee powder to the top perforated compartment of the Indian coffee filter and press down lightly with the plunger.

  2. Pour 1/2 cup of boiling water

Pour 1/2 cup (120ml) of boiling water (100°C / 212°F) over the powder, cover, and let it drip for about 10-15 minutes into the bottom container.

    10 min
  3. Heat 1 1/2 cups of milk

While the coffee is dripping, heat 1 1/2 cups (350ml) of milk in a pan until it comes to a boil.

  4. Add 1-2 tbsp of the collected coffee decoction

In a tumbler, add 1-2 tbsp of the collected coffee decoction, then pour in the hot milk and add 2 tsp of sugar to taste.

  5. Pour the coffee back and forth between the tumbler and the dabarah

Pour the coffee back and forth between the tumbler and the dabarah (small bowl) to dissolve the sugar and create a thick layer of foam. Serve hot.

A little kitchen wisdom

For the best flavor, use a blend of 70% coffee and 30% chicory. Use whole milk for a creamier texture.
