How to make it
5 steps. Take it one step at a time.
Mash the farmer's cheese
In a medium bowl, mash the farmer's cheese with a fork until mostly smooth. If the cheese is very wet, drain it through cheesecloth first.
Add the egg, sugar, and a pinch of salt
Add the egg, sugar, and a pinch of salt to the cheese. Mix thoroughly until combined.
Fold in the flour
Fold in the flour (45g / 1.6 oz) and mix until a soft, slightly sticky dough forms. Do not overmix or they will become tough.
Divide the dough
Divide the dough into 8 equal portions. Form each into a ball, then flatten slightly into a patty shape. Lightly dust each patty with extra flour.
Heat the sunflower oil
Heat the sunflower oil in a large non-stick skillet over medium heat. Place the syrnyky in the pan and fry for 3-4 minutes per side until golden brown and cooked through.

A little kitchen wisdom
Serve warm with a dollop of sour cream, honey, or fresh berry jam. For a smoother texture, pass the farmer's cheese through a fine-mesh sieve before mixing.
