How to make it
4 steps. Take it one step at a time.
Heat a large skillet or wok
Heat a large skillet or wok over medium-high heat. Add the cubed beef in a single layer to the dry pan and sear until the liquid released has evaporated and the meat starts to brown, about 5-7 minutes.
7 minAdd the niter kibbeh
Add the niter kibbeh (clarified butter) to the pan along with the sliced onions. Sauté until the onions are soft and translucent, about 5 minutes.
5 minStir in the minced garlic, ginger, and rosemary sprigs
Stir in the minced garlic, ginger, and rosemary sprigs. Continue to sauté for 2-3 minutes until fragrant.
3 minFinally, add the sliced jalapeños, salt, and black pepper
Finally, add the sliced jalapeños, salt, and black pepper. Toss for another 1-2 minutes until the peppers are slightly softened but still vibrant. Remove the rosemary sprigs before serving.

A little kitchen wisdom
Serve traditionally with injera (flatbread). For a spicy kick (Awaze Tibs), add 1-2 tablespoons of berbere spice mix during the sautéing process.
