How to make it
5 steps. Take it one step at a time.
Preheat your oven
Preheat your oven to 350°F (177°C). Rub the pork shoulder with salt, pepper, minced garlic, and caraway seeds.
Place one chopped onion
Place one chopped onion in a roasting pan. Add the pork on top and pour in about 1 cup of water. Roast for approximately 90 minutes, basting occasionally with the juices, until the meat is tender and the surface is crispy.
1 hr 30 minFor the cabbage, sauté the second chopped onion
For the cabbage, sauté the second chopped onion in a pan with a little oil. Add the sauerkraut (with some liquid), sugar, and a pinch of caraway. Simmer for 20 minutes. If desired, thicken with a teaspoon of flour mixed with water.
20 minFor the dumplings
For the dumplings, mix the flour, lukewarm milk, egg, and a pinch of salt into a dough. Fold in the bread cubes. Form two loaf-shaped rolls. Let rest for 15 minutes, then boil in salted water for 20 minutes (turn halfway through).
20 minRemove dumplings from water and immediately pierce them
Remove dumplings from water and immediately pierce them with a fork to let steam escape. Slice with a thread or a sharp knife.
A little kitchen wisdom
Traditional Czech dumplings are best made with 'Hrubá' (coarse) flour, but all-purpose flour works well. For the sauerkraut, adjust the sugar and vinegar at the end to find your perfect sweet-and-sour balance.
