How to make it
4 steps. Take it one step at a time.

5 minCombine the walnuts, pine nuts, peeled garlic clove, and the soaked bread

Add the grated Parmesan cheese and pulse a few times
Add the grated Parmesan cheese and pulse a few times. While the motor is running, slowly drizzle in the olive oil until a smooth, thick paste forms.
Season with a pinch of salt
Season with a pinch of salt. Taste and adjust. Serve at room temperature over your favorite pasta.
A little kitchen wisdom
For a whiter and more delicate sauce, you can blanch the walnuts for 5 minutes and remove the skins before blending. If the sauce is too thick when serving, dilute it with a tablespoon of pasta cooking water.
