How to make it
6 steps. Take it one step at a time.
Cut the peeled yuca
Cut the peeled yuca into 3-4 inch chunks. Place them in a large pot and cover with water. Add 1 tsp of salt.
Bring the water to a boil
Bring the water to a boil and cook for 20-30 minutes, or until the yuca is tender when pierced with a fork but not falling apart.
25 minDrain the yuca and let it cool slightly
Drain the yuca and let it cool slightly. Once handled, cut the chunks into thick wedges and remove the tough, woody string from the center of each piece.
Heat the vegetable oil
In a heavy skillet or deep fryer, heat the vegetable oil to 350°F (177°C).
Fry the yuca wedges
Fry the yuca wedges in batches for about 4-5 minutes per side until they are golden brown and crispy.
10 minRemove the wedges
Remove the wedges and drain on paper towels. Sprinkle with additional salt while hot. Serve immediately with garlic sauce.
A little kitchen wisdom
Removing the woody core after boiling is essential for the best texture. For extra crispiness, ensure the yuca is completely dry before frying.
