How to make it
5 steps. Take it one step at a time.

6 minStir in the tomato paste and red pepper paste
Stir in the tomato paste and red pepper paste. Cook for 2 minutes, stirring constantly to cook out the raw taste of the paste.
2 minAdd the rinsed red lentils, bulgur, and rice
Add the rinsed red lentils, bulgur, and rice to the pot. Stir well to coat the grains in the paste mixture.
Pour in the water or broth
Pour in the water or broth and add a pinch of salt. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 25-30 minutes, or until the lentils and grains are completely tender and the soup has thickened.
30 minIn a small separate pan, you can melt a little extra butter
In a small separate pan, you can melt a little extra butter and stir in the dried mint and red pepper flakes for 30 seconds until fragrant. Pour this flavored butter over the soup before serving, or stir it directly into the pot. Season with additional salt to taste.

A little kitchen wisdom
Unlike traditional lentil soup, Ezogelin is not blended; the grains are left whole to provide a rustic texture. Use a good quality red pepper paste (biber salçası) for the most authentic flavor.
