How to make it
4 steps. Take it one step at a time.
Place the drained fava beans
Place the drained fava beans in a saucepan with a splash of water. Simmer over medium heat for about 10 minutes, or until the beans are very tender and heated through.
10 minPartially mash the beans
Using a fork or a potato masher, partially mash the beans until you reach your desired consistency (some people prefer it chunky, others smooth).
Whisk together the minced garlic, ground cumin, lemon juice, olive oil, and salt
In a small bowl, whisk together the minced garlic, ground cumin, lemon juice, olive oil, and salt.
Pour the dressing
Pour the dressing over the mashed beans and stir to combine. Garnish with plenty of chopped fresh parsley.
A little kitchen wisdom
Traditionally made with dried beans soaked overnight and slow-cooked for hours, this version uses high-quality canned fava beans for a quick and authentic breakfast. Serve with warm pita bread, tomatoes, and sliced onions.
