How to make it
5 steps. Take it one step at a time.
Heat the olive oil
Heat the olive oil in a large frying pan or traditional copper skillet over medium heat.
Add the finely chopped green peppers
Add the finely chopped green peppers to the pan and sauté until they soften, about 5 minutes.
5 minAdd the diced tomatoes, salt, black pepper, and red pepper flakes
Add the diced tomatoes, salt, black pepper, and red pepper flakes. Cook, stirring occasionally, until the tomatoes have softened and most of their juice has evaporated.
8 minCrack the eggs directly
Crack the eggs directly into the pan. Stir gently to break the yolks and swirl them into the tomato mixture, but do not over-scramble. Cook for 2-3 minutes until the egg whites are set but the yolks are still slightly moist.
3 minRemove from heat immediately
Remove from heat immediately and serve with fresh bread.
A little kitchen wisdom
Menemen is best enjoyed when the eggs are still slightly runny. It is traditionally eaten directly from the pan using pieces of fresh bread as a scoop.
