How to make it
5 steps. Take it one step at a time.
Heat 1 tablespoon of vegetable oil
Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the onion, garlic, and jalapeño. Sauté for 3-4 minutes until softened.
4 minPour in the tomato sauce
Pour in the tomato sauce and season with salt and pepper. Let the sauce simmer for about 10 minutes until it thickens slightly. Keep warm.
10 minHeat the remaining oil
In a separate small skillet, heat the remaining oil. Lightly fry each tortilla for about 30 seconds per side until soft but slightly golden. Drain on paper towels.
2 minFry the eggs sunny-side up or
In the same skillet, fry the eggs sunny-side up or to your preferred level of doneness.
3 minTo assemble, place two tortillas
To assemble, place two tortillas on each plate. Spread a thin layer of warmed refried beans on the tortillas, top each with a fried egg, and spoon the warm ranchero sauce over the eggs. Garnish with queso fresco.
A little kitchen wisdom
For the best results, use corn tortillas rather than flour. If you prefer a smoother sauce, you can blend the tomato mixture before simmering it.
