How to make it
4 steps. Take it one step at a time.
If using sugarcane stalks, peel the hard outer skin
If using sugarcane stalks, peel the hard outer skin and cut into sections that fit your press. If using pre-made juice, pour it into a large pitcher.
Slice the kumquats
Slice the kumquats in half. If using a professional press, run the kumquats through the machine along with the sugarcane to extract the oils from the peel. If making at home, squeeze the juice of 3-4 kumquats directly into the sugarcane juice.
Stir the mixture well
Stir the mixture well to combine the sweet sugarcane juice with the tart citrus juice. Taste and add more kumquat if a more tart profile is desired.
Fill two glasses
Fill two glasses with ice cubes and pour the kumquat sugarcane juice over the top. Serve immediately while ice cold.
A little kitchen wisdom
In Vietnam, this is typically made by pressing sugarcane stalks through a specialized metal roller machine alongside the kumquats. At home, if you don't have a sugarcane press, you can purchase fresh sugarcane juice and stir in the kumquat juice.
