How to make it
6 steps. Take it one step at a time.
Bring the water to a boil
Bring the water to a boil in a kettle or pot.
Place the green tea leaves
Place the green tea leaves in a teapot. Pour in 1/2 cup (120ml) of the boiling water. Swirl the teapot gently for 30 seconds to 'wash' the tea, then pour out the water, keeping the leaves in the pot.
1 minPour the remaining boiling water
Pour the remaining boiling water over the washed tea leaves. Allow to steep for about 2 minutes.
2 minStuff the fresh mint leaves and the sugar
Stuff the fresh mint leaves and the sugar into the teapot. Stir gently to dissolve the sugar and ensure the mint is submerged.
Allow the tea to steep
Allow the tea to steep for another 3-5 minutes. To mix the tea, pour one glass and then pour it back into the pot; repeat this twice before serving.
5 minPour into small tea glasses from a height
Pour into small tea glasses from a height to create a light foam on top. Serve immediately.
A little kitchen wisdom
Traditionally, this tea is poured from a height of at least 12 inches to create a layer of foam (the 'turban') on the surface. Gunpowder green tea is the standard choice because it unrolls and withstands the heat well.
