How to make it
4 steps. Take it one step at a time.
Place the rooibos tea bags or loose leaves
Place the rooibos tea bags or loose leaves in a mug and pour 120ml (1/2 cup) of boiling water over them. Let steep for 5-7 minutes to create a strong tea concentrate.
7 minHeat the milk in a small saucepan or microwave
While the tea is steeping, heat the milk in a small saucepan or microwave until steaming, but not boiling. Use a milk frother to create a thick foam.
Remove the tea bags or strain out the loose leaves
Remove the tea bags or strain out the loose leaves. Stir in the honey while the tea is still hot.
Pour the frothed milk
Pour the frothed milk over the tea concentrate, holding back the foam with a spoon initially, then topping the drink with the remaining foam. Dust with a pinch of cinnamon.
A little kitchen wisdom
For the best flavor, use high-quality loose-leaf rooibos tea. If you have an espresso machine, you can make a 'red espresso' by using finely ground rooibos in the portafilter.
